Vinification: Destemming-crushing -Controlled temperature fermentation at 25°C – average maceration time of about 15 days in steel tanks.
Maturation of about 10 months in tonneaux and barriques of second passage. Minimum 6 months in bottle before release.
Wine features: At the sight it is a bright and intense red. The bouquet is fine, vinous and fruity with a hint of liquorice that adds interest. In the mouth it is balanced, with very intense retro-olfactory sensations, decidedly fruity.
Longevity over 10 years.
Winemaker’s Note: To pair with stuffed pasta, bollito misto, arrosti and mature cheeses.
