Barolo DOCG Paiagallo

Paiagallo is one of the most historic vineyards in the municipality of Barolo. Thanks to the soils rich in sandy marl and 30-year-old plants, it is a Barolo with great energy and structure, but wrapped in a pleasant, delicate sensation, with heady aromas and sweet tannins. In the mouth are perceived aromas of dried cherry, nut and citrus peel, with a spicy aftertaste. Full bodied with slightly firm tannins and a long, balanced finish.

Vinification
Pressing – Controlled fermentation at a controlled temperature of 28°C. Average duration of maceration: about 20 days. Malolactic fermentation in steel in November. Maturation of about 24 months in French and Slavonian oak barrels of varying sizes up to 60 hl, ranging in age from new to 10 years. Minimum 10 months in bottle before release.
Features
Pale red colour with orange reflections. In the mouth are perceived aromas of dried cherry, walnut and citrus peel, with a spicy aftertaste. Full-bodied with slightly firm tannins and a long, balanced finish.

Ideal with first courses based on meat, brasati and cheeses.
