Vinification: Pressing – Controlled fermentation at a controlled temperature of 28°C.
Average duration of maceration: about 20 days. Malolactic fermentation in steel in November.
Maturation of about 24 months in French and Slavonian oak barrels of varying sizes up to 60 hl, ranging in age from new to 10 years.
Minimum 10 months in bottle before release.
Wine Features: Pale red colour with orange reflections. In the mouth are perceived aromas of dried cherry, walnut and citrus peel, with a spicy aftertaste.
Full-bodied with slightly firm tannins and a long, balanced finish.
Winemaker notes: Ideal with first courses based on meat, brasati and cheeses.
